Easy No-Nut Banana Bread
The banana is definitely the fruit of choice around casa de Whited. Among the regulars on our grocery list, bananas are always at the top, right next to the Goldfish crackers, 2% milk, peanut butter and boneless chicken breasts. We eat a lot of chicken around this place. But we digress…
It isn’t often that we have a couple of uneaten bananas lying around to the point of no return but when we do it’s an opportunity for a special treat of either banana pancakes (yum!) or this quick and easy banana bread (double yum!).
Ingredients:
- 1 1/2 cup flour
- 1 cup sugar
- 2 ripe bananas (if we have one we’ll just use one, but two is ideal)
- 1/3 cup melted butter
- 1 egg
- teaspoon vanilla extract
- teaspoon baking soda
- 1/2 a teaspoon salt
Mix it all up, pour it into a greased loaf pan and bake at 350 degrees for a whole hour. It’s husband approved.

The only thing you’re missing in your banana bread is chocolate chips!!! Double yum!!!
