Big Game Sunday = Dip, Hot Dip
We’re getting ready to watch the big game with friends and are thinking of dip. Hot dip with spinach and artichokes. In case your mouth is watering too, here’s the recipe:
Ingredients:
- 20 ounces of spinach leaves without stems
- 4 tablespoons of unsalted butter
- 1 cup of chopped yellow onion
- 1 tablespoon of minced garlic
- 1 teaspoon of salt
- 1/2 teaspoon ground pepper
- 1/4 teaspoon cayenne pepper
- 1/4 cup flour
- 1 cup milk
- 1 cup heavy cream
- 2 teaspoons lemon juice
- 1 cup of brie cheese, cut into cubes
- 1 cup of grated Monterrey Jack cheese
- 6 ounces of artichoke hearts
- 4 strips of bacon
- 1/4 cup of grated Parmesan cheese
Grease a large glass dish and preheat your oven to 350 degrees.
Boil spinach for 2 minutes and then run under cold water to cool. Chop finely.
Melt butter over medium heat. Add onion and saute for 3 minutes. Add salt and pepper, garlic, cayenne pepper and cook for 1 minutes. Add flour and cook for another 2 minutes. It will get clumpy.
Add milk and cream, stirring constantly for 2 minutes. Add spinach and lemon juice. Add brie and Monterrey Jack cheeses, artichokes and bacon. Pour into dish and top with parmesan.
Bake for 10 minutes. We serve with tortilla chips, pita chips, or bagel chips.
